The Bee’s Knees is a classic Prohibition-era cocktail made with gin, lemon and honey.
The phrase “bee’s knees” was prohibition-era slang for “the best.” This classic cocktail, born from the prohibition era, combines gin, lemon, and honey. A Bee’s Knees is especially delicious with Barr Hill Gin because it highlights the notes of raw, northern honey in the gin beautifully, and is balanced with bright, tart lemon. Instructions
- Make honey syrup: Combine two parts honey and one part hot water. Stir until combined and let cool.
- Before juicing your lemon, peel off a big strip of zest using a vegetable peeler, for your twist.
- Combine Barr Hill Gin, fresh lemon juice, and raw honey syrup in a cocktail shaker.
- Add ice and shake vigourously for 15-20 seconds.
- Double strain into a chilled coupe glass.
- Squeeze the lemon peel over the glass with the yellow side facing your cocktail to release some of the essential oils.
- Add the lemon twist as a garnish and enjoy!
